Banana Coconut Streusel Muffins

I've said it before and I'll say it again, I love coconut. I'll eat pretty much anything with coconut. A while ago I posted this yummy recipe for Coconut Lime Banana Bread which is A-mazing. Last week on my beloved Pinterest, I found another coconut recipe for muffins this time. I tried them out last week and once again, A-mazing. I dare you not to make them.



BANANA COCONUT STREUSEL MUFFINS

Makes 9 standard size muffins

•1/2 cup shredded or flake coconut
•2 packed tablespoons light brown sugar
•1 cup plus 2 tablespoons all purpose flour
•1/8 teaspoon salt, plus a pinch for the streusel
•2 tablespoons cold butter, sliced
•6 tablespoons granulated sugar
•2 teaspoons baking powder
•1/4 cup neutral oil, safflower or grapeseed (I used Canola Oil)
•3/4 cup mashed overripe bananas (2 bananas)
•1/4 cup whole milk (I used buttermilk instead)
•1 large egg, at room temperature, lightly beaten
•1 cup chopped walnuts or other nut (optional)
1.Position a rack in the center of the oven and preheat to 350 degrees F. Lightly grease nine cups of a standard muffin tin with oil or nonstick spray, then dust them with flour, or use ungreased paper muffin cups.
2.To make the streusel, in a bowl stir together the coconut, brown sugar, 2 tablespoons of the flour, and a pinch of salt. Add the butter and rub the mixture together with your fingers or a pastry cutter until you have large crumbles about the size of a pea. Set aside.
3.In a large bowl, whisk together the remaining cup of flour, the granulated sugar, baking powder, and the remaining 1/8 teaspoon salt.
4.In a small bowl, stir together the 1/4 cup of oil with the mashed bananas, milk, and egg until they are well combined. Add the banana mixture to the flour mixture and stir until just combined. Add chopped nuts if desired.
5.Using an ice cream scoop, fill the prepared muffin cups halfway. Top the muffins with streusel, dividing the streusel evenly among the muffins. Fill the three empty cups halfway with tap water to prevent the muffin tin from warping.
6.Bake the muffins on the center rack until they rise and are golden and bounce back when pressed, about 30 minutes. Let cool in the tin for a minute or two and serve warm. Leftovers can be wrapped in foil and stored in the refrigerator for up to 4 days, then rewarmed in a 350 oven for 10 min. before serving.

Coconut Lime Banana Bread

I have found that people seem to have a love-hate relationship with coconut. There are those who, like me, LOVE it and will choose to eat something simply because the word coconut it used to describe it, and there are those who HATE it, usually blaming it on the texture. Well, if you hate coconut, this post is not for you. I recently found this recipe, and for the reason stated above, I just had to make it. And let me tell you, it is delicious! I love banana bread and have made and tried several different kinds, but never with coconut. If you are a fan, trust me, you will love this!!!

Coconut Lime Banana Bread

Ingredients:
2 cups flour
3/4 tsp baking soda
1/2 tsp salt

1 cup sugar
1/4 cup softened butter
2 eggs
1 - 1 1/2 cups smashed bananas (about 3 bananas)
1/4 cup vanilla yogurt
3 tbs apple juice or apple sauce
1/2 tsp vanilla
1/2 cup coconut flakes
1 tbs coconut to sprinkle on top

Glaze
1/2 cup powdered sugar
approximately 1 1/2 tbs fresh lime juice

Mix flour, baking soda and salt in small bowl, then set aside

Mix eggs, butter and sugar in mixer. Add mashed bananas, yogurt, apple (juice or sauce), vanilla and coconut. Then add the dry ingredients, mix on low speed just until moist. Pour in greased (I just used Pam) bread pan. Sprinkle the top with 1 tbs coconut. Bake at 350 degrees for about an hour (my oven always cooks faster so mine took about 45 minutes - and about half way through I covered it with foil because the top was getting really brown).

While the bread is cooking, make the glaze. Squeeze the juice of 1 lime and add powdered sugar until its a slightly runny consistency.

When the bread is done, cool for 5 minutes, slide out of bread pan and drizzle the glaze over your warm bread.

My New Favorite Thing

I never thought I'd be one of those moms who made their own baby food. To be honest, it was a bit intimidating to me. I'm not a good cook and I don't enjoy cooking so it definitely was not something that I was interested in doing...not even a little bit. My poor, poor Allie got all of her food from a jar. Haha. No, I don't think there is ANYthing wrong with jarred food but right now I'm all about making my own, AND I'm even excited about it. I guess I have several reasons, some of which stem from some New Year's resolutions that I made...wanting to save money, wanting to push myself and try some new things, wanting to cook more and also because of the fact that Allie is the world's pickiest eater, I wanted to do something different in the food department with Sienna, just to see if it would prevent her from following in her sister's footsteps. I remember having several conversations with my mom where she said that when my brother and I were babies, she had this portable food mill that she would use when she cooked dinner or went out to eat. She would just throw in a bunch of food that she had made or ordered, grind it up, and feed it to us right there. I had never heard of something like that (obviously I know some people do this with a food processor or a blender). Well, it still exists! My sister in law found this Baby Food Mill at Buy Buy Baby and I just had to give it a try. It's only $20 and I had a $5 off coupon and a gift card so I was basically free :) Sienna is just starting to eat baby food so I've only used it for bananas and avocado so far but I LOVE it! No cords, no electricity, SO convinient and it gives you a great arm workout! :) It's perfect for small meals or when your on the go. I can't wait to use it more!

Top Chef

The other night Matt's youngest brother, Will, came over for dinner. Somehow we got on a conversation about Orange Julius. Do you remember Orange Julius? Weren't they always next to Hot Dog on a Stick? Anyways, Matt and I both claimed that we make the best homemade orange julius. And since there were three Abrams in the room, it turned into a big competition (when I was a McGuire, I would have never cared who made the best anything!) So of course, Will became our taste tester for the cooking competition, or rather, our blending competition for this matter...

Yep, mine!!! Matt does NOT like to lose, especially to his wife, but he took it pretty well. (Besides the fact that he blamed the loss on the fact that he had to make his first so it sat in the fridge, we didn't have enough milk and the lighting in the kitchen was just not right.)

I hate chicken!!!



So I decided it was probably time to start Allie on meat. Except for her food strike in the beginning, Allie is a great eater. I have not found one thing that she doesn't like...until now. I gave Allie chicken in chicken broth, yum right? NO!!! She absolutely hated it, not just disliked it, but hated it! Even to the point where the poor thing would gag. Really I can't blame her, the stuff looks and smells like cat food but babies are supposed to like that kind of stuff right? Anyways, I just had to videotape it. Please don't call CPS on me for laughing at her but it's pretty funny. I promise I haven't made her eat the stuff again (for all you mom's out there who haven't moved on to meat yet, get the meat that has fruit or veggies mixed in, like pineapple glazed ham or chicken & apples, Allie LOVES it!) The video is about three minutes but worth it if you watch the whole thing!

Cookie Decorating

Every year my family gets together to decorate Christmas cookies. It's been a tradition since as long as I can remember and is always so much fun. My brother, however, always finds a way to turn your typical cookie shape into something that it's not intended to be. The year that Matt and I got engaged, he turned two stars into a bride and groom, it was so cute. This year his firefighting must have influenced him a bit. Below is what is supposed to be a mitten, turned into a hand with the finger cut off. Nice, huh?! :) Then there's another mitten turned into a shark, very creative. Then we have the pretty ones...

Allie's first food experience!
